Ingredients required for Ketogenic Poha are Cauliflower, Peanuts, olive oil, mustard seeds, curry leaves, onion, salt, turmeric, green chili, coriander and lime juice.
Instructions for Ketogenic Poha:
- First, separate the cauliflower florets from the stock and wash the florets thoroughly.
- Grate these florets in a food processor using the grater attachment, you can also grate them by hand.
- Now cut the cauliflower stalks into little squares and this is what is going to mimic the potatoes in Poha, dump these stalks in salted boiling water and boil for 5-10 minutes.
- Take a pan, add 20 grams of peanuts, and dry roast them.
- In a pan add a tablespoon of olive oil, some butter, and some mustard seeds, and once these mustard seeds start popping put in curry leaves. After this add chopped onions and give it all a good mix.
- Now add a little bit of salt, some turmeric, roasted peanuts, and green chili.
- Once you have cooked out the spices a little bit, add in our cauliflower and give it all a good mix after this add a splash of water mix it all and cover with the lid, and let it cook till cauliflower is nice and tender this should take you about 5 to 10 minutes.
- Once the cauliflower is done add boiled cauliflower stalks and finish it off with some fresh coriander and a nice big squeeze of some lime juice and your ketogenic Poha is ready.
