Ingredients for Ketogenic Poha:

Ingredients required for Ketogenic Poha are Cauliflower, Peanuts, olive oil, mustard seeds, curry leaves, onion, salt, turmeric, green chili, coriander and lime juice.

Instructions for Ketogenic Poha:

  1. First, separate the cauliflower florets from the stock and wash the florets thoroughly.
  2. Grate these florets in a food processor using the grater attachment, you can also grate them by hand.
  3. Now cut the cauliflower stalks into little squares and this is what is going to mimic the potatoes in Poha, dump these stalks in salted boiling water and boil for 5-10 minutes.
  4. Take a pan, add 20 grams of peanuts, and dry roast them.
  5. In a pan add a tablespoon of olive oil, some butter, and some mustard seeds, and once these mustard seeds start popping put in curry leaves. After this add chopped onions and give it all a good mix.
  6. Now add a little bit of salt, some turmeric, roasted peanuts, and green chili.
  7. Once you have cooked out the spices a little bit, add in our cauliflower and give it all a good mix after this add a splash of water mix it all and cover with the lid, and let it cook till cauliflower is nice and tender this should take you about 5 to 10 minutes.
  8. Once the cauliflower is done add boiled cauliflower stalks and finish it off with some fresh coriander and a nice big squeeze of some lime juice and your ketogenic Poha is ready.
